甘 is 口, a mouth, plus one short stroke. The stroke does not draw any particular thing; it only marks that something is being held there, so the attention falls on the taste in the mouth. Adding a mark to a ready-made character in this way is common on the bones. 說文 says “甘 is 美, fine; from a mouth holding 一. The 一 is the Way” — the first half is just that, one thing held in the mouth, while turning the stroke into “the Way” is a Han extension and not something the graph says. On the bones 甘 is common in place names and personal names.
